Rosie’s Walnut Mince Tacos

This simple recipe is a tasty plant-based twist

Ingredients

Walnut Mince

  • 1 cup walnuts
  • ½ cup sundried tomatoes
  • 1 tbsp soy sauce or tamari
  • 1 clove garlic
  • ½ tsp smoked paprika
  • ½ tsp chilli powder
  • ½ tsp cumin
  • Salt and pepper

 

To serve

  • 4 soft corn tortillas
  • 1 cup Greek yoghurt
  • 1 tsp chipotle
  • 1 avocado, slices
  • ¼ tin corn, drained
  • ¼ lettuce, shredded
  • 1 tbsp coriander, chopped
  • 1 lime, cut into wedges

Method

  1. Place walnuts in a bowl of room temperature and leave to soak for 20 minutes.
  2. Drain and add the soaked walnuts to a food processor, along with the sundried tomatoes, soy sauce, garlic, smoked paprika, chilli powder, cumin, salt and pepper. Pulse a few times to just combine, ensuring to not over process and turn into a paste.
  3. Mix yoghurt and chipotle in a small serving bowl.
  4. Heat corn tortillas, then fill with the walnut mince. Top with avocado slices, corn, lettuce, fresh coriander and a squeeze of lime.
