- ½ red onion, thinly sliced
- 2 tablespoons red wine vinegar
- 1 baby cos lettuce
- 1 tomato, cut into wedges
- 1 Lebanese cucumber, sliced
- 100g feta cheese, cubed
- 100g Always Fresh Salad Olives
- Extra virgin olive oil, for drizzling
- Fresh dill, for garnish
- Combine onion and red wine vinegar and allow to stand for at least 10 minutes.
- Tear lettuce into bite-size pieces and arrange on a platter with tomato wedges, cucumber, feta, Always Fresh Salad Olives, onion and vinegar and drizzle with olive oil.
- Serve garnished with dill.
