Balsamic Glazed Field Mushrooms

Ingredients
- 15 ml balsamic glaze
- 12 field mushrooms
- 15 ml Always Fresh Extra Virgin Olive Oil
- Fresh rosemary sprigs
- 5g Always Fresh Minced Garlic
- 5g chilli
- 150g ricotta
- 25g Always Fresh Capers
- 45g Always Fresh Fire Roasted Red Pepper Strips
- 25g Always Fresh Black Olives – Pitted
Method
Place mushrooms in a baking dish, and toss in olive oil.
Top with rosemary, garlic and chilli. Bake at 180c for 15 minutes, or until tender and aromatic.
Top mushrooms with ricotta, capers, peppers and olives. Drizzle with extra olive oil and balsamic glaze.
