TOMATO, MOZZARELLA AND BASIL BRUSCHETTA
Preheat oven to 200C/fan forced.
Cut Roma Tomatoes into halves and place in bowl with olives and basil paste, stir to combine.
Cut Baguette into even 2cm slices and place on a baking tray. Toast in the oven for approximately 3 minutes or until light golden brown.
Evenly divide mozzarella between the baguette slices and place back in oven to melt cheese slightly for approximately 45 seconds.
Spoon tomato mixture evenly onto each piece.
Garnish with fresh basil leaves and serve.
